Programmatically Update DB Item

Are there any examples of programmatically updating a field within a database item? I'm creating product entries and want to have an inventory qty field and based on a purchase transaction I want to decrement that value in the database.
Is there a way to do this via webvanta script or the like?

WebvantaScript access to the database is read-only, except for submitting forms.
We have, on a custom basis, set up the ability to decrement a quantity field in response to a purchase confirmation. I'll ask Christopher to follow up with you on how we might be able to set this up for you.
